AUNT BEA'S WILD TACO SALAD
1 heart of Romaine lettuce - washed and diced
1/2 head of Iceberg lettuce - washed and diced
1 to 2 tomatoes - diced fine
1 large cucumber - peeled, seeded, and diced fine
1 bunch green onions diced
1/2 red onion diced fine
4 oz. sliced ripe (black) olives, drained
1 11 oz. bag of Nacho Cheese Doritos
1 to 1 1/2 lbs. ground beef
1 package Taco seasoning
2 cups shredded cheddar cheese
Catalina Dressing
Combine the first 7 items above in a large salad bowl and set aside
Brown the ground beef, drain well, and add the taco seasoning
When ready to serve pour the seasoned beef over the salad, top with the shredded cheddar, and toss everything with a generous amount of the Catalina dressing. Crunch up the Doritos, and add them to the Salad with an additional amount of the Catalina dressing and toss again.
Serve immediately while the ground beef is still warm. Serves 6

Pineapple cheese spread
4 - 8 oz. bricks of cream cheese at room temperature
1 - 20 oz. can of pineapple tidbits, drained, with the juice reserved
1/2 cup shredded sharp cheddar cheese (or to taste)
4 oz. of sliced ham, diced fine
Lawrys Seasoned Salt
Place the cream cheese and pineapple tidbits in a large mixing bowl, and mix well with a mixer until smooth. Add 2 tsp. of Lawrys Seasoned Salt and mix again. Gently fold in the diced ham, and the shredded cheddar. If necessary add some of the reserved pineapple juice until you have a smooth and easily spreadable consistency.
Serve with assorted snack crackers for dipping. Makes a large batch, and can easily be cut in half.
